Cauliflower “fried rice” made with leftover cooked bacon. I try to not eat starchy carbs for dinner unless I plan on working out later that night or if I honestly can’t help it (as in I’m at a gathering where pasta is served or rice is served, y’know situations like that and this past month I’ve had a few starchy dinners since I’ve been having houseguests on 2 occasions and going on a short vacation)
Made (canned) spicy tuna rolls with purple cauliflower “rice”, avocado and cucumber. I cooked the cauliflower in the microwave with an egg mixed in (to hold the rice together) and chilled in the fridge then seasoned the “rice” with rice vinegar and a little bit of tamari (so I wouldn’t need to use it for dipping) and mixed a tiny bit of mayo with sriracha for the tuna.
During my vacation, I got a chance to play with a brand new Omega 8003 juicer. I find that it’s MUCH easier to clean than my Kuvings silent juicer because the screen basket is TINY and thus requires less scrubbing. I also appreciate that it comes with a strainer to separate extra pulp from the juice. Masticating juicers tend to leave the final juice a bit more pulp-y than centrifugal juicers and while I normally don’t mind (fiber!) the pulp, I usually would strain it into my glass using my own strainer. What I didn’t like about the Omega was that the feed tube is much narrower than the Kuvings and thus more prep work is needed to cut the veggies/fruit into smaller pieces. Even kale leaves had to be broken into smaller pieces to fit while I could push entire leaves into the Kuvings.
